Bringing an Authentic Roasted Chicken Note to Industrial Recipes
This liquid flavor with a chicken profile in a 1 liter package is formulated to deliver a rich, savory meat character without relying on natural poultry raw materials. Such a format is widely used across the food industry for producing bouillon cubes, dry soup mixes, sauces, snack products, chips, crackers, instant noodles, sausage products and ready meals, where a stable and recognizable chicken taste is needed regardless of raw material batch variation. The product belongs to the Gastronomy flavorings section, which brings together additives for building the taste and aroma profile of finished dishes, semi-finished products and snacks on industrial lines as well as in small and mid-scale production facilities.
The 1 liter package suits studio-scale and small-batch production well: trial runs before a full line launch, recipe development in food service kitchens, or small-volume artisan production. Despite the compact size, the flavor is concentrated enough for economical use, with typical dosage ranging from 1 to 5 grams per kilogram of finished product, depending on the desired intensity and the type of base. It is recommended to determine the exact dosage experimentally, starting with minimal amounts, especially when working with a new formulation.
The flavor is best introduced at the final stage of the technological process, after the main heat treatment of the product, at a temperature not exceeding 70-80 degrees Celsius, to avoid degrading volatile aromatic compounds. If the recipe involves extrusion or high-temperature frying, the additive is usually applied by spraying onto the finished product or blended into an oil phase before application. The chicken flavor pairs well with salt, monosodium glutamate, yeast extracts, onion and garlic powder, as well as with other taste additives from the same category - for instance, with Flavoring agent BECON 707, which allows for building complex meaty profiles for snack products or barbecue sauces.
In combined formulations where a layered flavor bouquet is required, the chicken flavor can be paired with mushroom notes - in particular, Flavor MUSHROOMS 688 works well in chicken-based broths and sauces, adding extra depth and an umami touch. For sweet-spicy directions, such as marinades or glazes for poultry, small additions of spicy flavors like Flavoring Cinnamon 514 can create an unusual accent that is popular in certain regional cuisines.
Store the flavor in a tightly closed container, in a dark, cool place away from direct sunlight and heat sources, at room temperature without sharp fluctuations. Once opened, the product should be used within a reasonable timeframe, and moisture should not be allowed to enter the container, in order to preserve the stability of the flavor profile for the full shelf life.
Chicken Bouillon Concentrate for Dry Soup Mixes
Water 200 ml
Chicken fat or vegetable oil 30 g
Salt 15 g
Monosodium glutamate 3 g
Onion powder 5 g
Food Flavor Chicken 4 g
Corn starch 20 g
Dissolve
the salt, glutamate and onion powder in hot water, then add the fat or oil and
heat the mixture gently over low heat until smooth. After removing from heat,
once the temperature drops below 70 degrees Celsius, add the flavor and mix
thoroughly. Separately dissolve the corn starch in a small amount of cold water
and pour it into the main mixture to thicken it, bringing it to a paste
consistency, which can then be dried or used as a base for bouillon cubes and
concentrates.
