A candy-shop taste built for consistent manufacturing
This Ukrainian-made montpensier flavor, supplied in a practical 1-liter container, recreates the recognizable fruity-floral note found in classic hard candy drops enjoyed across generations. Belonging to the Food Flavorings category, it is designed mainly for confectionery and spirits production, where consistent taste under heat and during long storage periods matters most. The 1-liter format suits workshops and production lines that need a steady, uninterrupted supply of raw material rather than frequent small purchases.
The primary application of this flavor is the manufacture of hard candy, drops, toffees and the classic small colorful sweets known as montpensier, prized for their bright fruity-floral profile. Beyond confectionery, the composition is widely used in liqueurs, tinctures, cocktail syrups, soft drinks, as well as chewing gum and fruit pastille production. The flavor withstands high temperatures, making it suitable for candy mass cooking without losing aromatic intensity. It is recommended to add the flavor at the final stage of processing, once the base has cooled to roughly 60-80 degrees Celsius, to prevent excessive evaporation of the lighter aromatic fractions. A typical dosage ranges from 0.1 to 0.5 percent of the total product weight, though the exact amount should always be tested experimentally depending on the desired intensity and base type.
From a technological standpoint, the flavor blends well with other fruity and citrus compositions, allowing manufacturers to develop their own signature profiles. Adding a small portion of Peach flavor introduces a soft juicy undertone, while combining it with Orange flavor brightens the citrus freshness of the finished product. For a more layered and exotic taste, technologists often introduce a drop of Tropical Fruits flavor, broadening the flavor palette and making the final product more distinctive against competitors.
Store the flavor in a tightly sealed container, in a cool dark place away from direct sunlight and heat sources, to preserve its original concentration for the entire declared shelf life. Reseal the container immediately after each use to limit air exposure. Thanks to its 1-liter volume, the product suits medium and large production batches where cost efficiency and consistent results across batches are essential.
Homemade montpensier hard candy
Sugar 500 g
Water 150 ml
Glucose syrup 100 g
Montpensier flavor 3 ml
Citric acid 2 g
Combine the sugar, water and glucose syrup in a saucepan and cook over medium heat until the mixture reaches the hard-ball stage, skimming off foam and preventing the edges from burning. Once the syrup reaches around 150 degrees Celsius, remove it from the heat and let it cool slightly to 80-90 degrees, then quickly stir in the citric acid and the flavor with a spatula. Pour the finished candy mass into silicone molds or spread it thinly onto an oiled surface, and once set, break it into pieces of the desired size.
