Bringing a nostalgic candy note into modern food formulations
Montpensier flavor recreates the sweet, fruity-caramel taste associated with classic colorful hard candies enjoyed for generations across many countries. This concentrated flavor additive from Ukraine is widely used across the confectionery and beverage industries to deliver a consistent, recognizable taste profile that does not depend on seasonal variations of natural raw materials. The product belongs to the Flavorings and flavor additives category, which brings together concentrates suited for confectionery, beverage, dairy and bakery production lines.
The primary global demand for this type of flavoring comes from the confectionery sector, including hard candies, caramel, dragees, marshmallow, jelly sweets and marmalade, as well as soft drinks, syrups and dairy-based desserts. The compact 5 ml bottle is well suited for home candy making, small test batches, and trial formulations before scaling up to larger production. Home confectioners often use it for lollipops, decorative sugar glaze on cakes, homemade jelly and marmalade, and flavored powdered sugar coatings.
Montpensier flavor blends well with other fruity notes, allowing for layered and more complex taste profiles. Combining it with Grape Isabella flavor creates an interesting wine-berry accent in jelly products, while adding Tropical Fruits flavor gives the composition a bright exotic character suitable for beverages and candies. For a fresher, tangier profile, a small addition of Apple Cider flavor works well too.
The flavor should be introduced at the final stage of preparation, once the mixture has cooled to around 60-70 degrees Celsius, to prevent the loss of volatile aromatic compounds under high heat. Typical dosage ranges from 0.5 to 2 grams per kilogram of finished product, though the exact amount should be adjusted based on the desired taste intensity and the specifics of the recipe. A small trial batch is recommended before scaling up any formulation.
Store the flavor in a tightly sealed bottle, in a cool, dark place away from direct sunlight and heat sources, at stable room temperature. Under proper storage conditions the product retains its properties throughout the shelf life stated by the manufacturer. Keep the bottle upright and close the cap tightly after each use to minimize air exposure and preserve the aromatic compounds for longer.
Homemade Montpensier jelly candies
Sugar 180 g
Water 100 ml
Gelatin 15 g
Montpensier flavor 1 ml

stirring until fully dissolved. Remove from heat, let cool slightly, then stir
in the swollen gelatin until completely dissolved. Once the mixture cools to
around 60 degrees, add the flavor and citric acid, mix well and pour into
silicone molds. Refrigerate for at least 3 hours until fully set, then remove
