A high-gel-strength plant-based setting agent for food, pharma and cosmetic formulas
Agar-Agar 1200 is a natural polysaccharide extracted from red seaweed, valued for one of the highest gel strength ratings among plant-derived setting agents available on the market. The 25 gram pack size is well suited for home use, recipe testing and small trial batches, whether for culinary experiments or for crafting cosmetic masks and gels in a small home studio setup. This ingredient belongs to the wider category of gelling agents and thickeners, which brings together natural and synthetic thickening solutions used across multiple industries.
The primary and historically largest application of agar-agar lies in the food industry, where it is used for making marmalade, marshmallow, mousses, jellies, confectionery fillings, and as a stabilizer in dairy products and sauces. Unlike animal-derived gelatin, agar-agar forms a firm, elastic gel even at low concentrations and sets at room temperature, which makes it popular among pastry chefs, culinary professionals and manufacturers of plant-based food products, including vegan desserts. Beyond culinary use, agar-agar is widely applied in microbiology as the base of nutrient growth media for cultivating cultures, and in the pharmaceutical industry for producing capsules and controlled-release tablets.
In cosmetic manufacturing, agar-agar is used to build gel textures for face masks, jelly-type creams, body gels and hair styling products, thanks to its ability to form a stable gel without leaving a sticky feel on skin. To incorporate it into a formula, agar-agar powder is first dispersed in cold water and left to hydrate for 10-15 minutes, then heated to 90-95 degrees Celsius with constant stirring until the particles fully dissolve, after which the mixture sets as it cools to around 35-40 degrees. Recommended dosage in formulations ranges from 0.5 to 3 grams per 100 grams of the total mass, depending on the desired gel firmness. The powder should be stored in a dry place at room temperature, in a tightly sealed container protected from moisture and direct sunlight.
Agar-agar pairs well with other natural thickeners, allowing formulators to build complex textures and fine-tune gel elasticity. Combining it with Senegal Acacia Gum softens the overall gel structure and gives the formula a more pliable consistency. It is also frequently paired with Carrageenan, which improves elasticity and reduces syneresis, meaning less liquid separates from the finished gel over time. For cosmetic emulsions and creamy textures, agar-agar is sometimes complemented with Solagum AX, which produces a softer, more cream-like texture without excessive firmness.
Citrus and mint jelly cubes
Agar-Agar 1200 - 4 g
Water - 400 ml
Fresh orange juice - 200 ml
Sugar - 50 g
Fresh mint leaves - 5 g
Combine
the agar-agar powder with cold water and let it hydrate for 10 minutes, then
bring the mixture to a boil over medium heat, stirring constantly for about 2
minutes until all granules are fully dissolved. Add the sugar and chopped mint
leaves to the hot liquid, stir until the sugar dissolves, remove from heat and
let it steep for a minute before straining out the mint. Pour in the orange
juice at room temperature, mix well, then pour the mixture into molds and leave
to set at room temperature for 30 minutes before transferring to the
refrigerator to firm up completely.
