Desserts from cottage cheese - a variety of choices
A cottage cheese dessert is perfect for a Saturday morning or a Friday night. It is versatile and suits any mood, and the soft taste of the cheese wins over most food lovers. Here are a few recipes for different tastes.
Berry cottage cheese
Let runny cottage cheese drain in a colander. Whip 100 g of thick cream with a tablespoon of icing sugar. Purée any berries in a blender and press them through a sieve. Spoon the cheese into bowls, pipe the cream on top, dust with icing sugar and decorate with mint leaves. After an hour in the fridge, pour over the berry purée and serve with almond biscuits. For fragrant touches in desserts, browse our flavourings range.
Royal cottage cheese bake with apricots
The evening before, halve 20 apricots, remove the stones, cover with half a cup of regular and vanilla sugar, add 100 g of cognac and leave somewhere cool.
Rub softened, not melted, butter with flour until smooth. Add half a cup of sugar, a little vanilla, baking powder, 100 g of chopped almonds and 2 yolks and knead an elastic dough. Drain the apricots and mash them with a pack of cottage cheese, 3 tbsp of sour cream and half a cup of sugar. Whisk the whites with sugar. Press the dough into a tin, for example a silicone baking mould, add the filling and top with the whites. Bake over a medium heat until golden on top.
Tenderness cheese cream three ways
First way: whip butter with icing sugar and vanilla into a fluffy cream, gently fold in the cottage cheese while still whisking, and chill a little. Second: rub an egg yolk with sugar and combine with sieved cottage cheese; butter and honey can replace the sugar. Third: mix sieved cottage cheese with egg, butter and sour cream, slowly bring to the boil while stirring, take off the heat, add sugar, stir and cool.
Cottage cheese desserts are often seen as kids' food, but these recipes would grace a festive table. If you enjoy sweet experiments, read our article on flavouring chocolate.
